| 8 oz. mixed crabmeat |
| half an onion, grated |
| 5 oz. white sauce |
| 1 tsp. tabasco sauce |
| 1 hard boiled egg, chopped |
| 2 Tbsp. plain yogurt |
| salt and black pepper |
| 1-2 Tbsp. Parmesan cheese |
| paprika |
| lime wedges, to garnish |
1. Make up white sauce using a packet mix (or place 5 oz. milk, 1 Tbsp. butter or margarine and 1 Tbsp. flour together in pan and cook gently, stirring continuously until thickened).
2. Stir crabmeat, onion, tabasco and egg into the sauce. Simmer for 3-4 min., then remove from heat and stir in yogurt and seasoning.
3. Spoon into individual dishes, and sprinkle with parmesan and a little paprika. Place under a low-medium broiler and cook until golden brown. Garnish and serve with a tossed green salad.
* Try substituting 8 oz. of cooked flaked smoked fish such as cod or haddock for the crabmeat.
