                Cajun Sausage Jambalaya

| 1 lb. boneless pork loin, cut into 1/2-in. cubes, lean | 
| 12 oz. andouille sausage, cut into 1/4-in. slices | 
| 2-1/2 c. water | 
| 1-1/2 c. uncooked medium grain rice | 
| 2 yellow onion, chopped | 
| 1 bell pepper (green, red, or both), chopped | 
| 2 stalks celery, chopped | 
| 2 Tbsp. vegetable oil | 
| 1-1/2 tsp. salt | 
| 1/4-1/2 tsp. cayenne pepper | 
| 1/2 c. green onions, chopped | 
Directions:
1. Mix all ingredients except green onions in 4- to 6-qt. slow cooker. Cover and cook on low for 5 to 6 hrs., or high for 2 1/2 to 3 hrs. Watch carefully during the last 1 hr. (low) or 1/2 hr. (high) of cooking to prevent rice from overcooking. Just before serving, check seasoning and add green onions.
