Sandwich Bread (Gluten Free)

2 1/2 c. gluten-free flour blend ** |
2 Tbsp. sugar |
1 Tbsp. xanthan gum |
1 Tbsp. dry active yeast |
1 tsp. salt |
1 egg + 3 egg whites |
2 Tbsp. oil |
1 tsp. vinegar |
1 c. very warm milk |

** Brown Rice Flour Blend |
1 1/3 c. brown rice flour |
7 Tbsp. potato starch |
3 1/2 Tbsp. tapioca flour |
|
** For 1 1/2 cup gluten-free flour blend: |
1/2 c. rice flour |
1/2 c. cornstarch |
1/2 c. tapioca starch/flour |
1 Tbsp. potato flour |
Directions:
1. Preheat oven to 375°F.
2. Combine gluten-free flour, sugar, xanthan gum, yeast and salt in a mixing bowl.
3. Add eggs, oil, vinegar and milk to mixing bowl. Beat at high speed for 3 minutes.
4. Scoop dough into an oil sprayed 8 inch x 4 inch bread pan. Let dough rise on top of warm oven, covered with a towel for 30-45 minutes.
5. Bake for 50 minutes. Do not under bake. (For a lighter crust, you may set a piece of foil over the top of the loaf during last half of baking time.)
