Sandwich Bread (Gluten Free)

Ingredients
2 1/2 c. gluten-free flour blend **
2 Tbsp. sugar
1 Tbsp. xanthan gum
1 Tbsp. dry active yeast
1 tsp. salt
1 egg + 3 egg whites
2 Tbsp. oil
1 tsp. vinegar
1 c. very warm milk

** Brown Rice Flour Blend
1 1/3 c. brown rice flour
7 Tbsp. potato starch
3 1/2 Tbsp. tapioca flour

** For 1 1/2 cup gluten-free flour blend:
1/2 c. rice flour
1/2 c. cornstarch
1/2 c. tapioca starch/flour
1 Tbsp. potato flour

Directions:

1. Preheat oven to 375°F.

2. Combine gluten-free flour, sugar, xanthan gum, yeast and salt in a mixing bowl.

3. Add eggs, oil, vinegar and milk to mixing bowl. Beat at high speed for 3 minutes.

4. Scoop dough into an oil sprayed 8 inch x 4 inch bread pan. Let dough rise on top of warm oven, covered with a towel for 30-45 minutes.

5. Bake for 50 minutes. Do not under bake. (For a lighter crust, you may set a piece of foil over the top of the loaf during last half of baking time.)
