                Pork Chops Marengo with Mushroom Rice

| 6 pork chops center cut, 3/4-in.-1-in. thick | 
| 1 Tbsp. flour | 
| 1 Tbsp. olive oil | 
| 1 can (15 oz.) chopped tomatoes | 
| 2 medium onions cut into wedges | 
| 1 medium green pepper, coarsely chopped | 
| 1 clove garlic minced | 
| 1 tsp. salt | 
| 1/2 c. dry white wine | 
| 1 c. UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice | 
| 1 can sliced mushrooms (6-8 oz.), drained | 
Directions:
1. Lightly coat pork chops with flour. Heat olive oil in a large skillet and brown pork chops on both sides.
2. Add tomatoes, onions, green pepper, garlic, salt and wine. Cover and simmer until chops are tender, about 1 hr.
3. Meanwhile, cook rice according to pkg. instructions. Add mushrooms to rice.
4. When chops are tender, remove from skillet; keep warm. Reduce sauce in skillet to thicken. Serve chops and sauce over rice.
