Chile Idaho® Potatoes

Ingredients
4 large Idaho® potatoes, peeled, washed and sliced thinly
1 Tbsp. tomato paste
2 Tbsp. garlic puree
1 Tbsp. chipotle in adobo puree
1 Tbsp. smoked paprika
1 c. whole milk
1 c. heavy cream
1 c. cheddar cheese
salt and black pepper to taste

Directions:

1. Combine all ingredients and season with salt and pepper to taste.

2. Place ingredients into a gratin dish. Bake in a 350°F oven until potatoes are tender, or approximately 30 min.

3. Serve hot.
