Chile Idaho® Potatoes

| 4 large Idaho® potatoes, peeled, washed and sliced thinly |
| 1 Tbsp. tomato paste |
| 2 Tbsp. garlic puree |
| 1 Tbsp. chipotle in adobo puree |
| 1 Tbsp. smoked paprika |
| 1 c. whole milk |
| 1 c. heavy cream |
| 1 c. cheddar cheese |
| salt and black pepper to taste |
Directions:
1. Combine all ingredients and season with salt and pepper to taste.
2. Place ingredients into a gratin dish. Bake in a 350°F oven until potatoes are tender, or approximately 30 min.
3. Serve hot.
